Ingredients
1/4 kg brinjal
1 cup green peas
2 potatoes
2 onions
2 tomatoes
2 teaspoons salt ( as per taste)
1 tablespoon oil
1 tablespoon ginger garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon coriander powder
1 teaspoon garam masala powder
1 cup water
1/2 cup chopped coriander
2 teaspoons salt ( as per taste)

Method
- Heat water in a vessel add diced potatoes, green peas and salt boil them.
- Heat oil in a kadai add chopped onions fry them till they change colour.
- Add ginger garlic paste fry till it changes colour.
- Then add chopped tomatoes fry till they are soft.
- Add diced brinjal and some salt cook till they are soft.
- Then add boiled potatoes and green peas mix lightly.
- Add chilli powder, coriander powder and garam masala powder.
- Mix everything well add 1 cup water stir and cook on low flame for 2 minutes.
- Finally, add chopped coriander mix once switch off the flame.
- Serve hot with roti or rice...

Note
Soaking brinjal in salt water helps to retain its original colour.
