Brinjal Potato Peas Curry

Ingredients

1/4 kg brinjal
1 cup green peas
2 potatoes
2 onions
2 tomatoes
2 teaspoons salt ( as per taste)
1 tablespoon oil
1 tablespoon ginger garlic paste
1/2 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon coriander powder
1 teaspoon garam masala powder
1 cup water
1/2 cup chopped coriander

Method

  • Heat water in a vessel add diced potatoes, green peas and salt boil them.
  • Heat oil in a kadai add chopped onions fry them till they change colour.
  • Add ginger garlic paste fry till it changes colour.
  • Then add chopped tomatoes fry till they are soft.
  • Add diced brinjal and some salt cook till they are soft.
  • Then add boiled potatoes and green peas mix lightly.
  • Add chilli powder, coriander powder and garam masala powder.
  • Mix everything well add 1 cup water stir and cook on low flame for 2 minutes.
  • Finally, add chopped coriander mix once switch off the flame.
  • Serve hot with roti or rice...

Note

Soaking brinjal in salt water helps to retain its original colour.
